Turkey Mince Meatball, Tomato Sauce and Rice

Ingredients:


Meatballs

  • 500g Turkey Mince

  • 1 Egg

  • 1 Slice Sourdough Bread - Blitzed into breadcrumbs

  • 1 Tbsp Oregano or Mixed Herbs

  • Salt and Pepper

Tomato Sauce

  • 2x Roasted Peppers

  • 5 Sundried Tomatos

  • Splash Red Wine Vinegar

  • Splash Garlic Oil

  • Handful Basil

  • 400g Passata

  • Salt and Pepper

To Serve

  • 200g Rice

  • 400ml Chicken Stock or Bone Broth

Method:


Meatballs:

  • Combine all the ingredients in a large bowl

  • Shape into meatballs

  • Refrigerate for 1 hour minimum or until needed

Tomato Sauce

  • Roast whole peppers directly on the flame of a gas hob and cook for 10-15 mins, turning often, until completely charred, leave to rest until cooled. Once cooled, run under a tap and peel off blackened skin

  • Add roasted peppers, sundried tomatoes, basil, splash of garlic oil, splash of red wine vinegar, passata, pinch of salt and pepper to a blender and blitz together to make the tomato sauce


  • Fry meatballs in a pan on a high heat until the outsides are golden brown

  • Cover in tomato sauce, reduce heat and place lid on pan

  • Simmer for 10 minutes or until cooked through

  • Cook rice in chicken stock or bone broth for extra flavour

  • Serve with a crack of black pepper and a sprinkle of parmesan and enjoy!
