Ingredients


Chicken and Veg

  • 2 Chicken Breasts

  • 1 Broccoli

  • 400g Sprouts

  • Garlic Olive Oil


Roasted Chickpeas

  • 1 Can of Chickpeas

  • 1 Tbsp Paprika

  • 1 Tbsp Cumin

  • 1 Tbsp Turmeric

  • Drizzle of Olive Oil


Dressing

  • Tahini

  • Juice of 1 Lemon

  • Drizzle of Olive Oil

  • Pinch of Salt


To Serve

  • Pomegranate Seeds

  • Quinoa or Rice


Method


  1. Prepare the Chicken:

    Flatten the chicken breasts. Coat them in garlic olive oil and sprinkle with oregano. Season with salt and pepper. Place in the air fryer at 80°C for 15 to 18 minutes until cooked through.


  2. Roast the Chickpeas:

    Drain and dry the chickpeas. Mix them with spices and a drizzle of olive oil. Roast in the oven at 180°C for 15 to 18 minutes until they are crispy.


  3. Cook the Vegetables:

    Chop the broccoli and sprouts. Mix them in garlic olive oil and season with salt. Roast in the oven or air fryer for 15 to 18 minutes.


  4. Make the Dressing:

    In a blender, combine the dressing ingredients: tahini, lemon juice, olive oil, and a pinch of salt. Blend until smooth.


  5. Cook Quinoa or Rice:

    Prepare the quinoa or rice according to package instructions.


  6. Assemble the Dish:

    Serve the chicken, roasted vegetables, and chickpeas on top of a bed of quinoa or rice. Drizzle with the dressing and top with a handful of pomegranate seeds.
