Turkey Mince Caponata Recipe

Our take on the Hello Fresh Classic

Ingredients:


- 400g Turkey mince

- 1x Red pepper

- 1x Pack of mushrooms

- Half a jar of green olives (pips removed)

- 500g Passata or 1x Tin of chopped tomatoes

- 2 Tablespoons red wine vinegar

- Teaspoon of garlic paste

- Teaspoon of oregano

- Handful of chopped basil

- Salt and pepper to taste

- Squeeze of honey

- Parmesan for serving


Method:


- Fry turkey mince until starting to crisp

- Chop peppers and mushrooms and add to frying pan

- Once softened add passata, olives drained and chopped in half, garlic paste, oregano, salt and pepper, red wine vinegar, squeeze of honey

- Allow to simmer until reduced down

- Taste and add extra seasoning if needed

- Garnish with fresh basil and parmesan

- Serve with homemade garlic bread for mopping up the juice!
