Crispy harissa mince with homemade hummus and flatbreads

Ingredients:
Hummus
60g Tahini
Juice of 1 Lemon
1 Tin of Chickpeas
2 Tbsp Garlic Infused Olive Oil
1 Tsp Dried Cumin (Optional)
Flatbreads
350g Plain Flour (can use gluten free if required)
2 Tsp Baking Powder
300ml Full Fat Greek Yoghurt
Pinch of Salt
Mince
500g Beef or Lamb Mince
2 Tbsp Harissa Paste
Drizzle of honey
Pinch of Salt
To Serve
Pomegranate Seeds
Chopped Mint
Method:
Hummus
Blitz Tahini and lemon juice in a food processor for 1 minute until it resembles a thick paste
Add garlic oil, cumin and pinch of salt and blitz again
Add chickpeas and a splash of cold water and blitz again
At this stage texture will be thick and lumpy
Keep adding cold water and blitzing until desired consistency is achieved
Flatbreads
Combine all ingredients in a large bowl
First mix with a wooden spoon and then use hands to bring dough together
Add a splash of water if needed
Separate dough into 6 and shape into balls
Roll out dough balls with a sprinkle of flour until 5mm thick
Fry in a hot pan either dry or with a splash of oil until golden brown
Mince
Fry mince in a pan on a high heat until golden brown
Add harissa paste, pinch of salt and a drizzle of honey
Spread hummus on the bottom of bowl or plate, add cooked mince on top and flat breads on the side
Top with pomegranate seeds and mint enjoy!
